- 255 g Plain flour
- 130 g Butter (softened)

- 80 g White sugar
- Egg × 1
- 1 tsp Vanilla extract
- 1 tsp Baking soda
- ½ tsp Salt
- 190 g Dark chocolate chips
Method
-
Cream
Beat softened butter with both sugars 2-3min until light and fluffy.
-
Wet
Beat in egg and vanilla until smooth.
-
Dry
In a separate bowl, whisk flour, baking soda and salt. Add to wet, mix on low just until no streaks.
-
Chocolate
Add the chocolate chips and fold them through the dough with a spatula until evenly distributed. Don't overmix — the dough should stay tender, not tough.
-
Chill
Cover and refrigerate dough 30min — controls spread and deepens flavour.
-
Preheat oven
Preheat oven to 180°C.
-
Shape 16 dough balls
Divide the dough into 16 balls (about 3 heaped tablespoons, roughly 55 g each) and set them on two lined trays, spaced well apart.
-
Bake 11-13min
Bake 11-13min until edges are golden but centres still look soft.
-
Cool
Rest on tray 5min, then transfer to a rack.
