Cottage Cheese Flatbread Wrap

The two-ingredient flatbread that went viral in 2024: cottage cheese and eggs spread thin on baking paper and baked into a soft, bendy sheet with golden, cheesy spots. Rolled around hummus, spinach, tomato, cucumber and crumbled sirene, it becomes a wrap with no flour at all. It bends like a tortilla but is made of eggs and cheese, so it keeps you full well past lunch.

  1. Heat the oven and oil the paper

    Heat the oven to 190°C (170°C fan). Line a baking tray with baking paper and brush the paper with the olive oil.

  2. Mash the cottage cheese

    Mash the cottage cheese in a bowl with a fork for 1 minute, pressing the curds against the side of the bowl until only small lumps remain.

  3. Beat in the eggs and seasoning

    Crack the eggs into the bowl, add the garlic powder, Italian seasoning, salt and black pepper, and beat with the fork until the eggs and cottage cheese form an even, thick mixture that spreads easily.

  4. Spread the mixture thin

    Pour the mixture onto the oiled paper and spread the mixture with the back of a spoon into one even rectangle about 5 mm thick, with no paper showing through.

  5. Bake the flatbread

    Bake the flatbread on the middle shelf for 30 minutes, until the flatbread is set, dry to the touch and golden with brown spots at the edges.

  6. Slice the tomato and cucumber

    Slice the tomato and cucumber into thin rounds while the flatbread is in the oven.

  7. Cool and peel off the paper

    Leave the flatbread on the tray for 5 minutes to cool and firm up, then slide a spatula under one corner and peel the paper away slowly.

  8. Fill the flatbread

    Turn the flatbread golden side down, spread the hummus over the pale side and lay the spinach, tomato, cucumber and crumbled sirene along one long edge.

  9. Roll up the wrap

    Roll the flatbread up tightly from the filled edge and cut the wrap in half on the diagonal.
