- 200 g Boneless chicken thighs, in 2 cm pieces
- Bell pepper, in 2 cm chunks × ½
- Spring onions, in 3 cm lengths × 2
- 1 tbsp White miso paste
- 1 tbsp Soy sauce
- 1 tbsp Honey
- 10 g Fresh ginger, grated
- 1 clove Garlic, grated
- ½ tsp Chilli flakes
- 2 tsp Sesame oil
- Lime × ⅓
- 1 pinch Salt
Method
-
Whisk the Glaze
In a bowl, whisk the miso, soy, honey, ginger, garlic, chili flakes, half the sesame oil and half the lime juice into a thick, smooth glaze.
-
Thread & Marinate
Set aside a third of the glaze for basting. Thread the skewers: two pieces of chicken, then pepper, then spring onion, repeating; brush all over with the rest of the glaze and marinate 10–15 minutes.
-
Char on the Griddle
Cook the skewers on a griddle pan over medium heat with the rest of the sesame oil for 10–12 minutes, turning and brushing with the reserved glaze (use a clean brush), until charred in stripes and cooked through — the thickest piece should reach 74°C on a food thermometer.
-
Rest & Squeeze
Rest a minute, taste and add a pinch of salt only if it needs it, then serve with any pan juices and a squeeze of the remaining lime.
