Lasagna Soup

The internet's favourite way to eat lasagna on a weeknight: beef, tomato and broken lasagna sheets simmered together in one pot, then topped with a cool, creamy spoon of ricotta, mozzarella and parmesan that melts into the hot broth. All the flavour of the baked dish in about 45 minutes, with one pot to wash.

- 1 tsp Olive oil
- Onion, finely chopped × ⅓
- 110 g Beef mince
- 2 cloves Garlic cloves, crushed
- 1 tbsp Tomato paste
- ½ tsp Italian seasoning
- 150 g Chopped tinned tomatoes
- 300 ml Beef stock
- 2 sheets Dried lasagna sheets
- 2 tbsp Ricotta
- 20 g Grated mozzarella
- 1 tbsp Parmesan, finely grated
- 4 leaves Fresh basil leaves
- 1.5 g Salt
- 0.5 g Black pepper
Method

Soften the onion
Heat the olive oil in a large pot over medium heat, add the chopped onion and cook for 4 minutes, stirring, until soft and translucent.

Brown the beef
Add the beef mince, turn the heat up to medium-high and fry for 6 minutes, breaking the meat up with a wooden spoon, until browned all over with no pink left.

Cook the garlic and tomato paste
Stir in the crushed garlic, tomato paste and Italian seasoning and cook for 2 minutes, stirring, until the paste darkens to a brick red.

Simmer the broth
Pour in the chopped tomatoes and beef stock, bring to a boil, then lower the heat and simmer for 10 minutes.

Cook the lasagna pieces in the soup
Break the lasagna sheets into bite-size pieces, drop the pieces into the simmering soup and cook for 12 minutes, stirring often, until the pasta is tender.

Mix the cheese topping
Mix the ricotta, grated mozzarella and parmesan with a pinch of the black pepper in a small bowl while you wait for the pasta.

Season and serve
Season the soup with the salt and the rest of the black pepper, ladle the soup into a deep bowl and top with a big spoon of the cheese mixture and the torn basil leaves.
