- 220 g Steak
- 25 g Butter
- 2 cloves Garlic
- 8 g Fresh Parsley
- 2 g Salt
- 1 g Black pepper
- 250 g Potatoes
- 100 g Green beans
- 1 tbsp Olive oil
Method
-
Parboil the potatoes
Cut the potatoes into 2 cm cubes and put them in a pot of cold, well-salted water over high heat. Bring to the boil, then simmer for 10 minutes — a knife should enter a cube with slight resistance still left.
-
Green beans in for the last 4 minutes
Drop the green beans into the same pot for the final 4 minutes, then drain everything into a colander and leave it to steam dry for 2 minutes.
-
Cube & dry
Cut the steak into bite-size cubes and pat very dry. Season well with salt and pepper.
-
Sauté the potatoes golden
Heat the olive oil in a wide frying pan over medium-high heat and add the potatoes in a single layer. Sauté for 8 minutes, turning them only twice, until they are golden and crusted, then tip them onto a plate with the beans and wipe the pan.
-
Sear
Heat a dry pan over high heat until very hot — a drop of water should sizzle away on contact. Add the cubes in one layer and sear 1–2 minutes without moving.
-
Garlic butter
Lower the heat, add the butter and minced garlic, and toss for 60 seconds until glossy. Return the potatoes and beans to the pan for the last 30 seconds and roll everything through the garlic butter together.
-
Rest & serve
Tip into a bowl, scatter chopped parsley over the top and let them sit for a minute, then serve.
